    (Mini) Fruit Pizzas

    These Mini Fruit Pizzas are colorful and bright and make a pretty summer treat that's, honestly, irresistible. I love to make these simple and delicious mini pizzas topped with sweet and tender sliced fruit as a gorgeous, family-friendly dessert or afternoon treat. A simple sugar cookie crust gets topped with a luscious, fluffy frosting and ripe, fresh fruit.

    Whenever I make these for a gathering, I get asked for the recipe. They are perfect for special events; they're basically edible art galleries. So cute, right? Bake the cookies the day before and these vibrant little fruity, brightly colored pizzas will take minutes to put together. The cookies are long lasting, so they're ready to go whenever!

    I love how the doughy, fluffy cookie base delivers that soft, classic bakery-style texture. The pillowy center has just the right amount of goldenness on its edges.

    These Mini Fruit Pizzas are easy to make gluten free and dairy free. You can easily make them gluten free and dairy free and they will be just as yummy! I'm always looking for dietary adaptable recipes and this is one.

    They are perfect for special occasions and events. These Mini Fruit Pizzas are memorable.

    You can get creative with interesting designs and meticulous decorating.

    These cookies are absolutely amazing and feel fancy yet fun to bake.

    Kids will love them too - you could lay out a "top your own" fruit pizza bar and let kids choose their fruit toppings. Give them sprinkles to add on top, too!

    Equipment Needed

    This is a seriously low-mess recipe. All I used was a mixing bowl, a spoon (you can also use a fork) and a baking sheet.

    You don't even need a machine to make the cookie dough!

    Ingredients Needed

    Flour: I used gluten free flour, but you can also use regular flour.

    Baking powder and baking soda: Make sure both are fresh batches.

    Sugar: I used coconut sugar. Regular brown sugar is great, too.

    Coconut oil: You'll need melted coconut oil for this recipe.

    Olive oil: You can also use avocado oil.

    Applesauce: Use unsweetened apple sauce, ideally.

    Vanilla extract: I love the desserty flavor it adds. You can leave it out, but I suggest including it.

    Egg: Use eggs at room temperature for your cookie dough.

    Vanilla frosting: Just your favorite brand is great for these Mini Fruit Pizzas.

    Fruit for the toppings: I used fresh kiwis, raspberries, strawberries and blueberries.

    Step By Step Instructions

    Step 1: Round up your ingredients and preheat oven to 350F.

    Step 2: Combine the dry ingredients in a mixing bowl.

    Step 3: Stir in wet ingredients.

    Step 4: Refrigerate your dough for 15-20 minutes.

    Step 5: Scoop cookie dough balls (1 1/2-2 inches) onto a prepared baking sheet lined with parchment paper and greased. Flatten the cookies with a spoon before baking in the oven for 15-17 minutes. They will be ready one the edges are golden brown.

    Step 6: Slice the kiwis and strawberries.

    Step 7: Cool the cookies before frosting them. Spread the frosting onto each cookie and top with the fresh fruit.

    These Mini Fruit Pizzas won't last long but you can store them in the fridge for a day or so.

    These Mini Fruit Pizzas aren't freezer friendly. You can freeze the cookies on their own, though.

    Variations

    Top the Mini Fruit Pizzas with lemon or orange zest or fold it into your cookie dough. Fold in white chocolate chips to make the "pizza bases" white chocolate chip.

    Try whipped coconut cream as a dairy free frosting - top it with tropical fruits like pineapple, mango and lychee.

    Shape your cookies into wedges to look like pizza slices!

    Try switching it up and topping it with chocolate frosting instead!

    How To Serve 

    Personally, I like eating these as soon as they're ready:

    • Enjoy them freshly made while the fruit is freshly sliced and the frosting is still fluffy and light. 
    • Add pretty garnishes like mint, chocolate shavings or edible flowers.

    I prefer to make them the same day so they stay fresh. You can make the cookies the night before, though.
