My Sheet Pan Thanksgiving Dinner is the perfect individual portion, complete with stuffing, vegetables, cranberry sauce, sweet potatoes and a juicy turkey breast. If you have food allergies or dietary restrictions, this is the best hack for Thanksgiving to be able to make yourself or bring a safe meal. This one pan meal is also so easy to throw together and can also be a great option if you are enjoying Thanksgiving with only a couple of people. It's allergy-friendly, wholesome and super customizable.

It is what I will be bringing to my family Thanksgiving! I created this recipe so that, for most food allergies, this Sheet Pan Thanksgiving Dinner will make everyone feel included. You can also transport this recipe in its pan, so it's such a winner.

The fact that it cooks faster than a full turkey dinner is great, especially if I'm taking it to someone else's house.
I'm obsessed with the perfectly roasted sides; Brussels sprouts, carrots and sweet potatoes caramelize beautifully right alongside the turkey. SO good!
Sometimes I'll swap out the veggies, add herbs or change the stuffing.

Ingredients Needed
Celery: I find this to have a lot of flavor and savory goodness.
Onion: I add these to the stuffing!
Bread: I use a gluten free loaf that forms the base for the stuffing.
Chicken stock: I use this to moisten the stuffing and add savory richness.
Carrots: I love brown sugar carrots as a side!
Sugar: Helps caramelize the carrots and sweetens the cranberry mix.
Brussels sprouts: I love the classic crunch from these veggies.
Garlic: Flavors the Brussels sprouts beautifully.
Sweet potatoes: I love the way the hasselback style gives them crispy edges.
Turkey breast: This is the center of the Thanksgiving meal and much easier than cooking a full turkey!
Cranberries: Cranberry sauce is such a classic for Thanksgiving!
Cinnamon: As a lover of Thanksgiving, cinnamon is a core spice for me. You can also use cardamom for a lower histamine option!
Oil: I find this just helps with the roasting and browning.

Step By Step Instructions
Step 1: Preheat the oven to 375°F and gather all ingredients.

Step 2: Chop the celery, carrots, Brussels sprouts, bread and onion. Slice the sweet potatoes into hasselback cuts (not all the way through).

Step 3: Toss carrots with ¼ cup sugar and 1 tsp oil; place on a baking sheet. Add the Brussels sprouts and sweet potatoes.
Step 4: Season Brussels sprouts with garlic and salt.
Step 5: Add the bread, celery and onion to another section of the sheet and mix with chicken stock.
Step 6: Place the turkey breast on top of the stuffing mixture.
Step 7: Combine cranberries, cinnamon and the remaining sugar in a small bowl; cover with foil and set on the baking sheet.

Step 8: Bake for 55 to 60 minutes, or until the turkey breast is cooked through.

Storage
I store my leftovers in an airtight container and refrigerate them for up to 3 to 4 days.
To freeze leftovers, I wrap portions in freezer safe containers for 2 to 3 months. I then let these thaw overnight in the fridge before reheating them.
Variations
I'll occasionally swap honey for maple syrup and Dijon mustard.
Another flavor combination I love is fresh orange juice, orange zest and maple syrup instead of sugar.
You can try replace the Brussels sprouts with broccolini, green beans or zucchini.
I've played around with adding diced Granny Smith apple and dried cranberries and its so good!
Use cubed cornbread instead of a regular loaf.

How To Serve
- I love to arrange slices of turkey over the stuffing and surround it with scoops of the roasted veggies and cranberries for a full holiday-style plate.
- Layer stuffing at the bottom, add turkey slices, then top with sweet potatoes, roasted veggies and a spoonful of warm cranberries.
- If I have leftovers, tuck the turkey, stuffing and cranberries onto rolls for the best next-day mini sandwiches.

Can you cook a turkey on a sheet pan?
Yes! A turkey breast cooks beautifully on a sheet pan. It roasts evenly, browns nicely and finishes faster than a whole bird.
Do you need to cover the turkey breast while baking?
Not necessarily. Leaving it uncovered helps the skin brown and crisp. If it begins to darken too quickly, you can loosely tent it with foil during the last 15 to 20 minutes.

Equipment
- 1 cutting board

Ingredients
- 1 pre-seasoned turkey breast
SWEET POTATOES
- 2 sweet potatoes
- 2 tbsp sugar
- 1 tsp oil
BRUSSELS SPROUTS
- 1 lb brussels sprouts
- dash salt
- 1 tsp garlic powder
- 1 tbsp honey
CRANBERRIES
- 1 cup frozen cranberries
- ¼ cup sugar
- 1 tsp cinnamon
- 1 tbsp water
CARROTS
- 3-4 large carrots
- ¼ cup sugar
- 1 tsp olive oil
STUFFING
- 1 loaf bread
- ¼ cup chicken stock
- 1 sweet onion
- 4 stalks celery
Instructions
- Gather your ingredients and preheat the oven to 375.
- Chop the celery, carrots, brussels sprouts, bread and onion. Slice the sweet potatoes thinly without slicing all of the way through to make hasselback potatoes.
- Add carrots to a small dish with ¼ cup sugar and 1 tsp oil and place onto baking sheet. Add brussels sprouts and sweet potatoes onto baking sheet.
- Top brussels sprouts with garlic, salt and honey.
- Add bread, celery and onion to baking sheet on another section and mix in chicken stock.
- Place turkey breast on top of the stuffing.
- Add cranberries, cinnamon and remaining sugar to a small bowl.
- Cover with tinfoil and place on top of baking sheet.
- Bake for 55-60 minutes or until turkey breast is done.
