    Air Fryer Banana Sushi

    Banana Sushi is a fun, fast snack or lunch idea that you can make in less than 15 minutes. These banana sushi rolls are the perfect simple and easy bite when you want something quick but still delicious. I make them with minimal ingredients that I usually already have in my kitchen. Think tortilla, nut butter or seed butter, jelly and fruit. So simple! I then add a few creative toppings like chia seeds, shredded coconut or even sprinkles. Just grab a cutting board, knife and your favorite spread and you're good to go!

    Banana roll sushi is a sweet take on ever-popular traditional sushi. It's made by rolling a banana in a tortilla, air frying and slicing it and topping it with various toppings.

    Equipment Needed

    For this Banana Sushi recipe, I used a cutting board, a knife, spoons and an air fryer.

    Ingredients Needed

    Tortillas: Go ahead and use your favorite brand of tortillas; regular ones and gluten free and will both work.

    Bananas: Choose ripe but not overripe bananas. I like to choose ones that will hold their shape well.

    Sunflower seed butter: You can also use your favorite nut butter in this Banana Sushi recipe.

    Strawberry jelly: Any brand of strawberry jelly will work. Try to use one that is mostly fruit versus one that is super sweet.

    Coconut flakes: These are used as a topping for the Banana Sushi.

    Maple syrup: To drizzle over the banana tortilla bites.

    Step By Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Spread the sunflower seed butter and jelly out evenly over each tortilla.

    Step 3: Layer either half or a whole banana onto each tortilla. This just depends on the size of the banana.

    Step 4: Roll the tortilla up tightly around the banana. Finish by pressing to seal the tortilla.

    Step 5: Slice the rolled tortilla into bite-sized rounds to resemble sushi.

    Step 6: Add the sushi pieces in an air fryer. I like to space them out and then cook them for about 7 minutes.

    Step 7: Finish off by drizzling the Banana Sushi with syrup and sprinkling it with coconut flakes.

    Storage

    Keep leftovers in an airtight container in the fridge for up to 24 hours for the best texture. I don't recommend freezing Banana Sushi because the tortillas and bananas just get mushy.

    I also recommend making these fresh, rather than trying to meal prep.

    If you want that crispy air-fried texture again, pop them back in the air fryer for 2-3 minutes at 350°F.

    Swap the spread: Almond butter, peanut butter or even chocolate hazelnut spread work if sunflower butter isn't your thing.
    Change the fruit: Try sliced strawberries, apple sticks or even mango strips.

    More savory: Skip the jelly and use cream cheese with a drizzle of honey for a different vibe.
