    These Apple Slice Cookies make the cutest afternoon treat and I love that they're made with fresh apples. Perfect for fall snacking, they're an easy, no bake recipe to whip up in a few minutes. Made in a few minutes, the flavor combinations are endless, so you can make them slightly different every time. I also really love that the base recipe only needs 4 ingredients. I am obsessed with the combination of apples and sunflower seed butter. It's always been a go-to snack for me!

    Ingredients Needed

    Apples: Go for firm apples like Honeycrisp, Fuji or Pink Lady, which hold their shape and go nicely with the creamy toppings.

    Sunflower seed butter: Using sunflower seed butter makes this recipe nut free! You can also use nut butter if you wish!

    Shredded coconut: I love the flavor that shredded coconut adds to this snack!

    Mini chocolate chips: Any kind works for these apple slice cookies. Mix it up with dark or white chocolate!

    Step By Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Slice the apples into rounds.

    Step 3: Spread the sunflower seed butter onto each slice of the apple slice cookies.

    Step 4: Top your apple slice cookies with chocolate chips and shredded coconut and enjoy!

    Storage

    These are best made fresh. The apple slices will oxidize and turn brown if kept too long so make, eat and repeat!

    Variations

    Peanut butter cup: Add peanut butter if you can tolerate it, with mini chocolate chips and crushed peanuts.

    Caramel apple: Sometimes I'll use a combination of almond butter, my Dairy Free Caramel and crushed pretzels.

    S'mores: Layer on a chocolate spread, mini marshmallows and graham cracker crumbs.

    Try a pear version of these apple slice cookies. They are not as fall-forward but are also really yummy.

    Other toppings I love adding include granola, raisins, chopped nuts, seeds or even a drizzle of melted dark chocolate.

    I love serving these on chilly fall days in a bunch of ways:

    • As part of a fall sweet treat spread with other yummy bites!

    Can I use a different seed or nut butter?

    Yes. Try almond butter, peanut butter, cashew butter, tahini or even chocolate hazelnut spread. I prefer sunflower as a nut butter alternative.

    What other toppings work well on these Apple Slice Cookies?

    I love using chocolate chips and coconut flakes, but you can also use pretzels, hemp seeds, chia seeds, chopped nuts, caramel drizzle, candy or any other toppings you love!
