Sunflower seed butter: I love the Sunbutter brand of sunflower seed butter.
Vanilla protein powder: I love this protein powder, so try it out with LESSWITHLAUR for a discount! This protein is also lower in histamine.
Dates: I prefer Joolie's dates brand. They blend up beautifully in this recipe for coconut energy balls. Use fresh dates if you are being mindful of histamine intake.
Dash salt: I never leave it out. Salt balances the sweetness from the dates.
Vanilla extract: Gives these energy bites their treat-like taste.
Step By Step Instructions
Step 1: Round up your ingredients.
Step 2: Into the food processor, add all your ingredients other than ¼ cup of shredded coconut.
Step 3: Take out pieces of the coconut energy balls mixture and roll them into balls.
Step 4: Roll the balls into coconut flakes. Store in an airtight container.
Storage
I generally keep my coconut energy balls in an airtight container for up to a week. They are best kept in the refrigerator.
You can also store these little bites in the freezer for about 2 months in a freezer safe container.
Variations
Use almond butter instead of sunflower seed butter for a rich, nutty flavor.
Replace vanilla protein with chocolate protein powder if you want to make a choc version.
Add lemon or orange zest into the mixture.
