    Here's my favorite way to make my all-time favorite, no bake Coconut Energy Balls in minutes with hardly any mess. I love having a stash of these bite-sized treats at home. These energy bites are vegan and I love that they're naturally sweetened with dates. They have a soft texture and are a great make ahead recipe as a snack or healthy dessert. These are a life saver as a breakfast bite as I'm running out the door for my morning workout. They're a game changer and I'm totally obsessed (can you tell?).

    Subtly sweet, delicious and 10x easier than a ton of homemade snacks, they're also a tiny bit chewy and make a nutty, gluten free coconut loaded bite that's totally addictive.     This energizing snack recipe is really easy to customize and add to.

    It's made with simple ingredients that you probably already have at home, or you can grab them at any grocery store.

    Great for meal and snack prepping, you can make these ahead so they're ready when you need them.

    Dates add a rich, caramel-like sweetness, so you don't need to add any refined sugar.

    These make the most delicious pre or post workout bites.

    The combination of dates and coconut means this recipe is fiber loaded.

    My Coconut Energy Balls are no bake, come together in minutes and leave very little to wash up.

    There's loads you can add to these treats. They are lots of ingredients that work well as add-ins with this recipe: Try chocolate chips, chia seeds or even nut butters.

    Equipment Needed

    I only used a food processor for this recipe.

    Ingredients Needed

    Coconut flakes: To roll your little energy balls in and to use for the batter!

    Sunflower seed butter: I love the Sunbutter brand of sunflower seed butter.

    Vanilla protein powder: I love this protein powder, so try it out with LESSWITHLAUR for a discount! This protein is also lower in histamine.

    Dates: I prefer Joolie's dates brand. They blend up beautifully in this recipe for coconut energy balls. Use fresh dates if you are being mindful of histamine intake.

    Dash salt: I never leave it out. Salt balances the sweetness from the dates.

    Vanilla extract: Gives these energy bites their treat-like taste.

    Step By Step Instructions

    Step 1: Round up your ingredients.

    Step 2: Into the food processor, add all your ingredients other than ¼ cup of shredded coconut.

    Step 3: Take out pieces of the coconut energy balls mixture and roll them into balls.

    Step 4: Roll the balls into coconut flakes. Store in an airtight container.

    Storage

    I generally keep my coconut energy balls in an airtight container for up to a week. They are best kept in the refrigerator.

    You can also store these little bites in the freezer for about 2 months in a freezer safe container.

    Variations

    Use almond butter instead of sunflower seed butter for a rich, nutty flavor.

    Replace vanilla protein with chocolate protein powder if you want to make a choc version.

    Add lemon or orange zest into the mixture.

    If you have time, toast the coconut and roll the balls in toasted coconut for extra crunch.

    Mix in espresso powder. I really love the rich coffee flavor this adds.

    Sprinkle with flaky sea salt or some gogi berries.

    I love to enjoy these Coconut Energy Balls in different ways:

    • As an easy, on-the-go breakfast.
    • Before or after a workout. They just lift me up!
    • With a mug of coffee or matcha!
    • As an afternoon or after dinner bite.

    Are energy balls healthy? 

    These coconut energy balls are made from wholesome ingredients and are sweetened naturally with dates rather than sugar.

    What if I don't have a food processor?

    You can chop all the ingredients up finely and then roll them together. As long as the mixture is sticky, the bits will cling together.

    How do I store these? 

    These coconut energy balls are best stored in an airtight container

    Can I freeze them?

    Yes, they freeze really well for up to 2 months.

    How long will they keep in the fridge? 

    They are fine in the fridge for a week or so.

    How do I get the coconut flakes to stick? 

    To get the coconut flakes to stick, make sure the energy ball mixture is slightly sticky before rolling. If it feels too dry, add a little water, nut butter or even a softened date to bind it together.

    Why aren't my energy balls coming together?

    Try adding a little more liquid if needed to make them stickier.

    Can I make these low histamine?

    Yup, I like to use a non-alcoholic vanilla extract or you can also skip it. Plus, I use low histamine protein powder.
